Ginger Shrimp Fried Rice

Ingredients

  • 3 cups cooked brown rice (cold)
  • 3 cups baby spinach
  • ¼ cup chopped fresh ginger
  • 1 bell pepper (red, green and yellow)
  • 1 small white onion
  • 2 tablespoons Minced Garlic
  • 1 lb Shrimp
  • 4 scrambled egg whites
  • ½ stick butter
  • 2 tablespoons sesame oil
  • 3 tablespoons Braggs amino acids (replaces soy sauce, more or less to taste)
  • Season to taste – Slap Yo Momma, Garlic Powder, Onion Powder, Cracked Black Pepper (based on preference)

Ginger Shrimp Fried Rice

Instructions 

  1. Heat ½ tablespoon of  butter in large skillet
  2. Whisk eggs to scramble in butter.. Scramble until fully cooked
  3. Remove eggs and set aside 
  4. Add 1 tablespoon of butter and sesame oil to pan, saute peppers, onions, and carrots until tender
  5. Add garlic and ginger
  6. Add shrimp and seasoning, cook until done
  7. Add cold rice and remaining butter (1 ½  tablespoon)  saute for 5 minutes
  8. Add baby spinach, eggs and Braggs amino acid and stir until heated through
  9. Serve while hot. Great with fresh brewed iced green tea.
